Baked Crunchy Balls
Love them! I have finally found a healthy crunchy tasty snack! I actually got this recipe from my parenting magazine. The recipes in the Parenting magazines are awesome. The recipes are all healthy and tastes good.
Cooked chickpeas rinsed and dried
Olive oil
Seasoning --- I used a dry Ranch packet but the recipe calls for garlic powder.
Preheat the oven to 400
Use a baking sheet and coat the beans with olive oil and seasoning.
Bake 30 min or until crunchy
Kids would eat this!

Eggs Jennadict

TODAY'S POST IS MY CHEAP LOW FAT VERSION OF EGGS BENEDICT. 1 WHOLE WHEAT ENGLISH MUFFIN TOASTED AND SPLIT ONE POACHED EGG HAM LUNCH MEAT PARSLEY SALT AND PEPPER I FIRST TOAST THE MUFFIN AND JUST PUT HALF ON BOTTOM LAYER WITH HAM LUNCH MEAT THEN I POACH AN EGG. IF YOU DON'T KNOW HOW TO POACH AN EGG... ITS ACTUALLY EASY. YOU JUST BRINGA POT OF WATER AND OLIVE OIL TO A BOIL. YOU CRACK THE EGG INTO THE WATER. YOU'LL SEE FATTY STUFF COME TO THE TOP AND YOU JUST SKIM THAT OFF. ITS EASIEST TO USE A BIG SERVING SPOON AND WHEN THE EGG IS FIRM YOU LIFT IT OUT OF THE WATER AND YOU PUT IT ON THE HAM AND MUFFIN. I SPRINKLE WITH SALT PEPPER AND PARSLEY AND ITS PRETTY GOOD. NOW... WHAT DO YOU DO WITH THE TOP OF THE MUFFIN? DIP IT IN THE EGG!

Pigs in a Muffin
My husband said my blog is cool. However, my pictures suck. So, FYI these pictures are coming from a cell phone!
Pigs in a Muffin
This is my take on one of my husband's favorite breakfast foods, the breakfast corndog.
This is a pancake muffin with brown sugar and maple sausage
2 cups pancake mix
1 cup water
1 egg
3 tablespoons of sugar free or Lite syrup
chopped up brown sugar and maple sausage
Cook the sausage first and then chop it up into bite sized pieces
spray or line a muffin sheet. (I use sylicone and it is amazing)
Mix the pancake mixture and pour into the muffin tins 3/4 full and then place the sausage pieces inside
Preheat your oven to 375 and cook for about 20 minutes (I just watched mine to see when it firmed up)
Totally awesome!

First Post
First, about me. I'm 31 and I am married with 2 children. My stepdaughter is 10 and my son was just born June 19th. I have an amazing husband and my kids are pretty cool too LOL!
I also have 2 dogs. If they knew I didn't mention them they would be mad!
I also work full time. Therefore, I don't have much time between working and being mom to have a hobby.
So, I decided to go with something I love! Eating :)
Since I gained 53 lbs with my pregnancy (I wasn't that thin to begin with I might add) - I've been desperately struggling to lose my baby weight. I had a c-section so I'm blaming it on that! HA
I have started this blog not only to encourage myself to stay on track, but to share and swap recipes with other people who love cooking too!
Oh, and I don't track calories or fat. I just try and eat healthy and exercise. Too much structure makes me OCD over food. Healthy eating is a lifestyle
So.. First recipe I want to share
Whole Grain Couscous with Turkey Sausage and Peppers
1 cup couscous
1/2 lbs turkey sausage rolled into meatballs
bag of frozen onions and peppers blend (I use Krogers brand)
chopped Garlic (I use minced garlic in a jar .. much easier) - 1 full teaspoon
1 tablespoon red wine vinegar
I cook the turkey sausage and drain the fat
I then add in the peppers, garlic and red wine vinegar and cook until the peppers are hot
cook couscous (according to its package directions)
Voila - easy recipe that even kids eat (well, my child picked out the peppers but whose counting)
